Diabetic Strawberry Jam

1 qt. cleaned strawberries

3 to 4 tsp. artificial sweetener

1 (1 3/4 oz.) pectin

1 tbs. lemon juice



Crush strawberries in saucepan. Stir in lemon juice,powdered pectin
and sweetener. Bring to a boil and boil for 1 minute stirring
constantly. Remove from heat and continue stirring for 2 minutes. Pour
into sterilized jars half pint size, to within 1/4 inch of top. Put on
cap and screw tight.
When cool, store in refrigerator.
