Stuffed Giant Pasta Shells

1- 8oz package giant pasta shells
3 tbsp butter
3 tbsp all-purpose flour
2 cups half and half or milk
1/2 pound Gruyere cheese, shredded
1/2 tsp nutmeg
1/2 tsp salt
2 eggs yolks
4 tablespoons melted butter
1/2 cup grated Parmesan cheese

Preheat oven to 400F. Grease a 9x13 inch baking dish. Cook pasta according to package directions; drain and set aside. In a saucepan over medium heat, melt butter. Stir in flour. Add half and half; cook, stirring constantly, until mixture thickens.

Stir in Gruyere cheese, nutmeg, and salt. Cook, stirring constantly, until cheese melts. Blend in egg yolks. Fill pasta shells with cheese mixture. Place in a baking dish filling side up. Drizzle with melted butter; sprinkle with Parmesan cheese. Bake for 15 minutes or until heated through.
