Broiled Fruited Pork Chops
You will need:
6 well-trimmed boneless pork loin chops, 1/2" thick 1 can (8oz) pineapple slices in juice, drained (reserve juice) 1 can (16oz) apricot halves in juice, drained 1/4 cup apricot preserves 2 teaspoons Dijon mustard 2 teaspoons cider vinegar
Arrange pork chops on rack in brioler pan. Cut pineapple slices in half. Arrange pineapple and apricots evenly around chops. Set aside. In small saucepan, combine preserves, mustard and vinegar. Cook over low heat for 5-8 minutes, until preserves are melted, stirring occassionally.
Brush chops with half of preserves mixture. Brush pineapple and apricots with half of reserved pineapple juice. Place chops under broiler with surface of meat 3 to 4 inches from heat. Broil for 10 to 12 minutes, or until desired with remaining preserves mixture and fruit with remaining juice once.
Serve with a side of couscous, or boxed rice or quick pasta-side for a starch and fresh greenbeans or tossed salad for a veggie.
