Broccoli and Cheese Lasagna Rolls
Ingredients: 8 lasagna noodles 2 egg whites 1 (10 oz) container ricotta cheese 1/4 cup grated Parmesan cheese 1 (10 oz) frozen chopped broccoli, cook & drain 1&1/2 cups spaghetti sauce 1/2 cup (2oz) mozzarella cheese
1) Cook noodles according to package instructions Drain and set aside. Preheat oven to 350 degrees.
2) In a large bowl, stir together egg whites, ricotta and parmesan cheeses. Add broccoli to cheese mixture. Stir until mixed well.
3)Spread a thin layer of spaghetti sauce on the bottom of 12" X 7&1/2" baking dish.
4) To assemble rolls: Put 1 noodle at a time on wax paper. Mound 1/4 cup broccoli/ cheese mixture 1/4" from short end. Roll noodle around mixture. Place seam side down in the baking dish.
5) Pour the rest of spaghetti sauce over the roll-ups. Sprinkle with mozzarella. Cover with foil and bake at 350 degrees for 35-45 minutes.
