Chic-tatoe Flamb'e
Ingredients: 3 boneless skinless chicken breast halves cut to cubes 3 medium sized baked or boiled potatoes cut to cubes 1 medium white onion julienned 2 cloves garlic minced 1 teaspoon celery salt 1/4 cup olive oil 1/2 teaspoon dried rosemary spice 1/4 teaspoon dried savory spice 1/2 teaspoon butter 1/2 cup Madeira wine 1/2 teaspoon coarsely chopped black pepper corns 1/2 teaspoon kosher salt 12-14 inch non-stick frying pan Put olive oil in the frying pan and heat on medium flame for approximately 2 minutes. Add chicken, garlic, rosemary, butter, savory, celery salt, pepper, salt, and onion. Cook for 3 to 5 minutes, until chicken turns white. Add Madeira wine and flamb'e using either a match or by tilting the pan slowly towards the flame. After the flame has gone out, continue cooking to reduce fluids by 2/3 rds, or another 3 - 4 minutes. At this point, add potatoes and mix well. Continue cooking till potatoes, chicken, and onions have a lovely caramel coloring too them. Drizzle olive oil over the top and sprinkle with parsley then serve. A good side dish to this would be steamed brocolli rabe. This meal takes about ten minutes to cook, if using left over potatoes. Longer if potatoes must be pre-cooked. Variations: I think this dish would also go well by adding green bell peppers in place of the onions, or even adding them in with the onions. I really don't see how any variation of the vegetables can be discounted. Even a sprinkling of cheese would be a nice addition. This is a recipe that can be quite variated.
