French Canadian Pea Soup
you will need : 2 1/4 cups of dried split peas 8 cups of water 1 large onion diced 2 celey stalks diced pepper 1 ham bone , 2 pounds of ham shanks. 2 carrots. cut into slices
You have to prepare the peas first. To do this you pick over the peas discarding any discolored ones place them in a bowl and cover them with water. After a few mintues remove any skins or split peas that float to the top. Drain the peas and rinse in a colander.
Then heat the peas and water in a big dutch oven type pot. boil the peas uncovered for 2 minutes. remove from heat and let stand for 1 hour.
Next you stir in the onion celery and pepper. also place in the ham bone. Heat to the boiling point then reduce to a low setting and simmer for about 1 and a half hours. (till peas are tender.)
Remove the hame bone, remove ham from bone and trim any excess fat. cut ham into 1/2 inch pieces.
Stir ham and carrots into the soup. heat to boiling then reduce heat to low. simmer for about 30 minutes.
