Ham and apples
You will need: 2 tbsp of margarine or butter 2 carrots thinly sliced 1 large apple chopped 1 small onion wedged 1 cup of milk 1 cup apple juice 3 tbsp flour 2 tsp ground mustard (dry) 1/4 tsp of pepper 2 cups of fully cooked smoked ham, cubed. 3 cups hot cooked brown rice.
Melt the margarine in a big skillet over medium heat. Cook carrots for about 2 minutes stiring occasionally. Add the apple and onion. cook until apple is soft. Remove from heat and keep warm.
Mix milk, apple juice, flour, mustard and pepper into skillet. Heat to boiling stirring constantly. boil and stir for one minute or until thick.
Stir apple mixture and ham into the sauce. Cook and stir for about 1 minute or until ham is heated.
Serve over rice.
