Jelly Crumb Cookies
[b]Dough:[/b] 4 cups flour 1 cup margarine or butter, softened 1 cup orange juice 1/2 cup sugar
[b]Filling:[/b] 1 cup fruit jam
1. Grease a rectangular (10x13) pan and heat the oven to 180F.
2. Mix all the dough ingredients (easiest by hand, after a quick stir with a fork).
3. Put half of the dough in the freezer and the rest in the fridge. Let set for an hour at least (over night works best).
4. Later - spread the refrigerated dough in the bottom of the pan.
5. Spread the jam over the dough.
6. Using a coarse grater, grate the frozen dough evenly over the jam.
7. Bake for 30 minutes, or until golden. Cut into squares immediately and store in an air-tight container.
*Tips and ideas* - If you only freeze the dough for an hour, spread it out first, or divide into small portions, so it freezes more in that short time.
- Chocolate spread (like Nutella) works well, too.
- Make a batch of dough and keep the whole thing in the freezer for "whenever". When the time comes, just make another batch of dough straight for the pan. NOTE: this means a double recipe, so you'll need two pans. Use different fillings for each pan!
- IF you have leftovers - don't worry. These cookies store well and can be frozen, too.
