Banana Bread
3/4 cup shortening 2 1/4 cups sugar 3 eggs 1 1/2 cup mashed bananas,about four (Ripe bananas are sweeter and make better breads) 1 cup milk with 2 tablespoons white vingar OR 1 1/8 cups buttermilk 1 1/2 teaspoons vanilla 3 cups sifted flour 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 3/4 teaspoon salt Cream shortening and sugar. Add eggs one at a time while mixing. Add bananas and vanilla, mix until blended. In another bowl mix dry ingredients. Alternate adding dry mixture and milk mixture to banana batter. Repeat until all ingredients are blended. Grease and flour two loaf pans. Pour equal amounts of batter into the pans. Bake at 350 degrees for 35 - 45 minutes or until toothpick comes out clean. This bread always taste better after sitting covered overnight. It gives the ingredients a chance to blend and rest.
