Easy Chicken and Potato Bake
5-6 chicken breasts, boneless/skinless (depending on size of family) 2 cans cream of mushroom soup 6-7 baking or red potatoes, cut into quarters 1-1/2 cans of milk (if you like the gravy more watery, add more milk) 1/2 cup chopped mushroom (optional) 1/4 cup finely diced onion (optional) Dash of garlic powder Dash of Italian seasoning salt and pepper to taste
Spray 9x13 pan with cooking spray. Line chicken breasts on bottom of pan. Pour cream of mushroom soups over the top, follow with the 1 to 1-1/2 cans of milk. Line the quartered potatoes around the edges of the chicken and in between the chicken. Make sure the soup mixture is covering the chicken and potatoes. Sprinkle seasonings over the top, and add mushrooms and onions (mix them up with the soup mixture). Cover pan with foil and bake approximately 45 minutes at 350 degrees-until chicken is cooked through and potatoes are tender.
Note: You can add frozen broccoli or spinach if you want to add veggies to the bake. A yummy combination!
