Mom's Creamy Corn Chowder

6 unsalted saltine crackers, finely crushed
2 cups milk
1/2 cup diced salt pork
1 medium white onion, chopped
2 cups red potatoes, diced
2 cups frozen corn kernels
1 cup water
1/2 tsp salt
1/2 tsp white pepper
Generous dash of paprika

Soak crakers in 1 cup milk and set aside.
In a 4 quart saucepan, over medium heat, fry salt pork untill crisp. Remove pork and set aside. In the remaining hot drippings, cook chopped onion until tender.
Stir in the remaining 1 cup of milk, potatoes, corn, salt, pepper, water, and paprika. Heat to boiling. Reduce heat to low and cover; simmer 20 minutes until the potatoes are fork tender. Stir in soaked crackers; heat all the way through.
To serve, ladle soup into bowls; garnish with salt pork and enjoy!
Prepares 6 1 cup servings
