Canadian Cheese Soup

1/2 cup chopped onion

1/2 cup chopped carrots

1/2 cup chopped celery

4 tbsp. margarine

1/2 cup flour

4 cups milk

4 cups chicken broth

1 package frozen hashbrowns, thawed

2 cups shredded cheddar cheese



Sauté onion in butter.

Add flour. Add chicken broth. Add all remaining ingredients. Simmer, stirring vigorously until thick.

Add cheese and allow it to melt.

Add white corn or cooked chicken if you would like.
